Just when you thought it was time to start drinking wine again, Western Australian distillery Dune Distilling Co. has created a brand new limited edition rhubarb and hibiscus gin, just in time for summer (and for your Christmas trifles and desserts.)

This is Dune Distilling Co’s third release since its Signature Gin launched in November 2019. The Margaret River based distillery recently took out one of only two gold medals given for gin at the 2020 Perth Royal Show Distilled Spirits Awards.

The perfectly millennial pink-hued gin takes its glorious rosy colour from the hibiscus, and also includes distillations of juniper, coriander, rhubarb and thyme.

It’s said to be best enjoyed “in a gorgeous glass poured over cubes of ice, mixed with Capi Yuzu Tonic or Dry Tonic,” according to Dune Distilling Marketing Manager Jo Tate. But we reckon it’s also bound to pair just as beautifully with that Christmas trifle you’ve been working so hard on.
