“Honey, I’m comb!”
It’s a pairing of local honey from the Mornington Peninsula and one of Australia’s best single malt whisky brands.
HER Starward Honeycomb is the product of a new collaboration between the local distillery and Melbourne’s HER Bar.
It marries Starward’s Two-Fold double grain whisky with Peninsula Honey’s local flora blend, creating a rich drink that just begs to be made into a honeycomb whisky sour.
The whisky itself has been fully matured in a combination of red wine and charred American oak barrels, giving it Two-Fold’s signature tropical fruit finish. It is then paired with the local honey sourced from 4500 hives in a process that retains both the honey and whisky in a pure state.
The drink will be released in creative style with a launch at HER Bar’s Music Room on Tuesday, November 15. The event promises to be an immersive audio experience, pairing music and whiskey. HER head chef Josh will be on the tools, preparing a four-course meal to match with the whisky.
Showing of the new whisky’s honeyed finish, the launch will feature a line-up of golden, honey-themed cocktails. Think a creamy honeycomb, peach and chamomile sour, or a Golden Gaytime milk punch.
HER Starward Honeycomb is available to purchase on the Starward website for $89.
