The Bar Copains team to open a new bar and restaurant in Surry Hills

An Albion Street institution is about to start a fitting new life as a hospitality destination.

The talented team behind Bar Copains is opening two new venues in the old Chef’s Warehouse on Albion Street.

Bar Copains owners and hospitality veterans Morgan McGlone and Nathan Sasi will be opening new restaurant Bessie’s right next door to sister bar, Alma’s.

The former kitchen supply store Chef’s Warehouse is a two level site where TAFE students and chefs have rolled in and out of for decades, Bessie’s and Alma’s are a fitting new chapter in the building’s life.

Located just 70 metres from Bar Copains at 111-115 Albion Street in Surry Hills, new restaurant Bessie’s will deviate from the Copains French accent, bringing a more Mediterranean menu to the strip.

Bessie’s, named after McGlone’s grandmother, and Alma’s for Sasi’s nan join a rapidly expanding list of restaurants named for influential ancestors on the Sydney dining scene. Margaret, Ursula’s, Jane, Arthur, Derrel’s and Charlotte Bar & Bistro among others all pay homage to those that came before as they continue to mould the future of dining.

Head chef Remy Davis has already been recruited, making the move back home from San Sebastian’s Michelin-starred Elkano, which McGlone and Sasi curate the drinks list for Alma’s. Don’t expect over-the-top mixology though, Alma’s aims for fun and elegance without the pomp and circumstance.

Bessie’s and Alma’s are slated to open late-2024 at 111-115 Albion Street, Surry Hills.
