The Melbourne chef shares this Italian summer cocktail, inspired by his time in Scopello.

Ingredients (8)

  • 30ml Amara Amaro d'Arancia Rosso di Sicilia (Italian herbal liqueur, substitute any amaro)
  • 45ml Prosecco (see note)
  • 1 tsp Sicilian green olive brine
  • 1-2 tsp lemon juice
  • A good dash of chilled sparkling mineral water (optional)
  • Ice cubes, to serve
  • Blood orange wedge, plus extra (optional) to serve
  • 1 Sicilian green olive, plus extra (optional) to serve

Method

  • 1.
    Add the Amara and Prosecco to a wine glass or tumbler. Season with 1 tsp of olive brine and a squeeze of lemon juice to taste (this will depend on how sweet your Prosecco is), then add a splash of sparkling mineral water, if you desire.
  • 2.
    Generously fill the glass with ice. Garnish with a wedge of blood orange and a Sicilian green olive. Serve with extra blood orange and olives alongside, if desired.

Recipe Notes

You can find Amaro Amara at Enoteca Sileno. For the Prosecco, we prefer a brut or extra brut style, ideally from Prosecco Conegliano Valdobbiadene DOCG, which gives the drink more freshness.
