Andrew McConnell's Amara spritz cocktail

The Melbourne chef shares this Italian summer cocktail, inspired by his time in Scopello.
Ingredients (8)
- 30ml Amara Amaro d'Arancia Rosso di Sicilia (Italian herbal liqueur, substitute any amaro)
- 45ml Prosecco (see note)
- 1 tsp Sicilian green olive brine
- 1-2 tsp lemon juice
- A good dash of chilled sparkling mineral water (optional)
- Ice cubes, to serve
- Blood orange wedge, plus extra (optional) to serve
- 1 Sicilian green olive, plus extra (optional) to serve

1.Add the Amara and Prosecco to a wine glass or tumbler. Season with 1 tsp of olive brine and a squeeze of lemon juice to taste (this will depend on how sweet your Prosecco is), then add a splash of sparkling mineral water, if you desire.

2.Generously fill the glass with ice. Garnish with a wedge of blood orange and a Sicilian green olive. Serve with extra blood orange and olives alongside, if desired.
Recipe Notes
You can find Amaro Amara at Enoteca Sileno. For the Prosecco, we prefer a brut or extra brut style, ideally from Prosecco Conegliano Valdobbiadene DOCG, which gives the drink more freshness.
