Banana bread and maple syrup pudding with nutmeg walnuts

The sweetness of ripe bananas combined with walnuts and maple syrup will make this pudding an instant family favourite.
Ingredients (11)
- 80g unsalted butter, melted, plus 30g melted, extra
- 1/4 cup (60g) brown sugar, plus 2 tbs extra
- 2 eggs, at room temperature, lightly beaten
- 2 (230g) very ripe bananas, peeled and mashed, plus 3 extra, peeled and sliced in half lengthways
- 1 1/2 cups (225g) self-raising flour
- 1/2 cup (125ml) milk
- 3/4 cup (75g) walnut halves
- 2 tsp freshly grated nutmeg, plus extra to serve
- Creme fraiche, to serve
Maple sauce
- 1 cup (250ml) pure maple syrup
- 50g unsalted butter, melted

1.Preheat oven to 180°C/160°C fan-forced. Grease a 2L ovenproof dish. Place dish on a baking tray.

2.Place butter, sugar, eggs, mashed banana, flour and milk in a large bowl and stir until well combined and smooth. Transfer to prepared dish and level top.

3.For the maple sauce, use a fork to lightly whisk maple syrup, butter and 1 cup (250ml) boiling water in a large heatproof jug until well combined. Pour mixture over the back of a large metal spoon onto the surface of the batter. Top with extra banana, lightly pressing into the batter. Bake on the tray for 15 minutes.

4.Meanwhile, place walnuts, nutmeg, extra butter and extra sugar in a small bowl and stir until well combined and walnuts are evenly coated in the mixture.

5.Sprinkle walnut mixture evenly over pudding, then bake for a further 25 minutes or until pudding has risen, a skewer inserted in the centre comes out clean, and top of pudding and walnuts are golden. Remove from oven and stand for 5 minutes to rest.

6.Carefully bring pudding straight to the table, sprinkle with extra nutmeg and serve with creme fraiche.
Recipe Notes
This pudding is very forgiving, as it can happily stand at your table for a good 10-15 minutes before the lovely sauce soaks into the sponge.
You’ll need a 2L ovenproof dish.
