This duck fat potato recipe only needs two ingredients – potatoes and duck fat. It’s incredibly simple to pull together and the results are crispy, crunchy, golden potatoes that are perfect for your Sunday roast dinner. 

Can you make duck fat potatoes in the air fryer?

While this recipe uses an oven, you can make duck fat potatoes in the air fryer. Simply boil the potatoes as per step 1, warm the duck fat in the microwave until it turns into a liquid and pour to coat the potatoes. Gently mix to evenly disperse the duck fat before the potatoes are air-fried for 15 minutes at 180°C, tossing halfway through. 

What ingredients you’ll need 

Floury potatoes: We used sebago, but you could also use any potatoes that are high in starch and low moisture, as they’re great for roasting. Other varieties include coliban, Dutch creams and ‘new’ potatoes.

Duck fat: Rendered from ducks, this type of fat has a rich and savoury flavour with slightly gamey notes. When cooled, duck fat solidifies into a creamy, smooth texture. Store any leftover duck fat in the jar in your fridge. 

How do you achieve the crispiest-ever duck fat potatoes?

A crucial step that should not be missed when preparing this delicious side is the correct preparation of the potatoes before they go into the oven.

Take the time to parboil the potatoes before draining and returning them to the pan they were cooked in. Agitate the pan by shaking well to help remove excess moisture and to rough up the potato edges. This will create plenty of surface area to get crispy and golden when roasted. 

How to store leftover duck fat potatoes

It is possible to store leftover potatoes, however they may lose their crunchy exterior after reheating. Allow potatoes to cool to room temperature before storing in an airtight container in the fridge for 3-4 days. To reheat, pan fry the potatoes over medium-high heat with a little extra duck fat or oil until crisp and heated through.

Duck fat potatoes are the ultimate Sunday roast dinner side. Pair it with your favourite cut of meat like roast pork, chicken, lamb or turkey, alongside greens like a homemade coleslaw or green beans, and of course, some Yorkshire puddings

  • 1.5kg floury potatoes (such as Sebago), peeled, cut into 3cm pieces
  • 100g duck fat

Method

    Preheat the oven to 180°C/160°C fan-forced. Place the potato in a saucepan of cold salted water and bring to the boil. Reduce heat to medium and cook for 5 minutes or until par-boiled. Drain, then return to the pan and shake well over medium heat to dry out and rough up the edges (this will help them crisp up when roasting).

    Place the duck fat in a roasting pan, then place in the oven for 5 minutes to heat. Remove from the oven, carefully add potato to duck fat and gently toss to coat. Return to the oven and roast, turning twice, for 45 minutes or until golden and crisp. Sprinkle with salt flakes and serve.
