Method

  Zest half the orange into a small shallow dish filled with salt and mix to combine. Set aside. Fill a margarita glass with ice and chill in the fridge until ready to serve. Combine tequila, Aperol and lime juice in a cocktail shaker filled with ice, and shake vigorously.

  Cut orange into wedges. Remove ice from the margarita glass and rub the rim of the glass with a wedge of orange until coated. Dip the rim into the orange and salt mixture until the edges are lightly coated.
• 3.
  Strain the cocktail into the margarita glass filled with ice. Garnish with an orange wedge to serve.
