An avocado smoothie bowl is deliciously creamy and full of plant-based nutrition.

Ingredients (13)

  • 2 large avocados, roughly chopped
  • 200g chopped pineapple, frozen
  • 100g chopped mango, frozen
  • 250g coconut yoghurt or coconut milk
  • 6 mint leaves
  • Juice of 1 lime
  • 1/3 cup (115g) cashew butter, room temperature
  • Pulp from 1 passionfruit
  • 1/2 cup (80g) toasted granola
  • 1/2 cup (30g) toasted coconut flakes
  • 1/2 cup picked mint leaves
  • 1 lime, halved
  • 1/2 cup frozen raspberries, to serve

Method

  • 1.
    Place the avocado, pineapple, mango, coconut yoghurt, mint and lime juice into a blender and whiz, scraping down the sides occasionally, until smooth and thick like a sorbet. Spoon the smoothie into chilled bowls and top with cashew butter or coconut yoghurt, passionfruit, granola, coconut flakes, mint, lime and frozen raspberries. You can make the smoothie up to 1 hour ahead and place in the freezer before spooning into bowls and serving.
