Avo colada smoothie bowl
An avocado smoothie bowl is deliciously creamy and full of plant-based nutrition.
Ingredients (13)
- 2 large avocados, roughly chopped
- 200g chopped pineapple, frozen
- 100g chopped mango, frozen
- 250g coconut yoghurt or coconut milk
- 6 mint leaves
- Juice of 1 lime
- 1/3 cup (115g) cashew butter, room temperature
- Pulp from 1 passionfruit
- 1/2 cup (80g) toasted granola
- 1/2 cup (30g) toasted coconut flakes
- 1/2 cup picked mint leaves
- 1 lime, halved
- 1/2 cup frozen raspberries, to serve

1.Place the avocado, pineapple, mango, coconut yoghurt, mint and lime juice into a blender and whiz, scraping down the sides occasionally, until smooth and thick like a sorbet. Spoon the smoothie into chilled bowls and top with cashew butter or coconut yoghurt, passionfruit, granola, coconut flakes, mint, lime and frozen raspberries. You can make the smoothie up to 1 hour ahead and place in the freezer before spooning into bowls and serving.
