Green beans in tomato sauce
This side is perfect for spring weather, and accompanies dishes from the Med spectacularly.
Ingredients (7)
- 2/3 cup (160ml) extra virgin olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 5 (1kg total) medium tomatoes, cut into 3cm pieces
- 1 tbs tomato paste
- 450g green beans, trimmed
- 1/2 cup (100g) feta, crumbled

1.Heat three-quarters of the olive oil in a large saucepan with a lid over a medium heat. Add the onion and cook until soft. Add the garlic, tomato and tomato paste, 1 tsp salt and 1/2 tsp freshly ground black pepper, and cook for 2 minutes or until tomato paste is toasted.

2.Add the green beans with just enough water to cover them, about 2 cups (500ml). Cover with the lid and bring to the boil, then reduce heat to a simmer and stew the beans for about 45 minutes. Remove the lid and cook for a further 15-20 minutes to allow the sauce to thicken. Stir in the remaining 2 tbs olive oil. Scatter over crumbled feta to serve.
