- 1 1/2 cups (about 250g) leftover meat (roast pork, beef or turkey), shredded
- 400g can black beans, rinsed, drained
- 2 1/2 cups (250g) grated pizza cheese
- 2 large tomatoes, finely chopped
- 1 small red onion, finely chopped
- 1/3 cup finely chopped coriander, plus extra leaves, to serve
- 1 1/2 tbs finely chopped pickled jalapenos, plus extra, to serve
- 2 tbs lime juice
- 2 avocados

1.Preheat oven to 200°C/180°C fan-forced.

2.Scatter chips over a baking tray and sprinkle with meat, beans and cheese. Bake for 10-15 minutes, until cheese is melted.

3.Meanwhile, combine tomatoes, onion, chopped coriander and chopped pickled jalapeno in a small bowl with 1 tbs lime juice. Season with salt flakes and freshly ground black pepper and toss to combine.

4.Mash avocados and remaining 1 tbs lime juice in a medium bowl with a fork until a rough dip. Season to taste.
