Daniel and Luke Mancuso share their Yiayia style potato wedges. These cuts are crispy on the edges and soft and pillowy on the inside.

Ingredients (3)

  • 5 desiree potatoes
  • Salt to taste
  • Olive oil to drizzle

Method

  • 1.
    Preheat the oven to 200°C (180°C fan-forced).
  • 2.
    Peel five large desiree potatoes and slice them into 1cm thick wedges. Scatter into a large roasting pan in a single layer, then sprinkle with salt and drizzle over some olive oil.
  • 3.
    Transfer to the oven and cook for 30 minutes. Turn the wedges over, drizzle with a little more oil and continue to cook for 15-20 minutes until the wedges are cooked through and golden.
