Serve up a big bowl of Chinese comfort food tonight.

Ingredients (8)

  • 450g packet microwave brown rice
  • 1.5L (6 cups) Massel Chicken Style Liquid Stock
  • 4 garlic cloves, crushed
  • 2 tbs finely grated ginger
  • 1 tbs sesame oil
  • 2 tsp light soy sauce
  • 1/2 Chinese barbecue duck (from Chinese takeaway shops), cut into pieces
  • Thickly sliced nori, toasted white sesame seeds, thinly sliced spring onions, chopped garlic chives (optional) & light soy sauce, to serve

Method

  • 1.
    Microwave the brown rice according to packet instructions.
  • 2.
    Combine stock, garlic, ginger, sesame oil, soy and rice in a saucepan over high heat. Bring to the boil, then reduce heat to low. Simmer, stirring occasionally, for 15 minutes to infuse.
  • 3.
    Add the duck to the congee and simmer for 3 minutes or until heated through and congee takes on some duck flavour.
  • 4.
    Divide congee among bowls and top with nori, sesame, spring onion and garlic chives, if using. Serve with light soy on the side.
