Quick brown rice duck congee
Ingredients (8)
- 450g packet microwave brown rice
- 1.5L (6 cups) Massel Chicken Style Liquid Stock
- 4 garlic cloves, crushed
- 2 tbs finely grated ginger
- 1 tbs sesame oil
- 2 tsp light soy sauce
- 1/2 Chinese barbecue duck (from Chinese takeaway shops), cut into pieces
- Thickly sliced nori, toasted white sesame seeds, thinly sliced spring onions, chopped garlic chives (optional) & light soy sauce, to serve

1.Microwave the brown rice according to packet instructions.

2.Combine stock, garlic, ginger, sesame oil, soy and rice in a saucepan over high heat. Bring to the boil, then reduce heat to low. Simmer, stirring occasionally, for 15 minutes to infuse.

3.Add the duck to the congee and simmer for 3 minutes or until heated through and congee takes on some duck flavour.

4.Divide congee among bowls and top with nori, sesame, spring onion and garlic chives, if using. Serve with light soy on the side.
