This seafood recipe is easy to execute and sure to impress at any dinner party.

Ingredients (5)

  • 200g unsalted butter, softened
  • 2 tbs cracked mixed peppercorns
  • 750g coarse rock salt
  • 18 frozen scampi, halved lengthways
  • Parsley leaves, lemon wedges and shoestring fries (optional), to serve

Method

  • 1.
    In a small bowl, beat the softened butter with the cracked peppercorns. Shape into a square log, then wrap in baking paper and chill until hard.
  • 2.
    Preheat the oven to 200°C.
  • 3.
    Pour the rock salt into a large baking tray. Lay the scampi on the salt, cut-side up, nestling them down into the salt as you do so. Place in the oven and bake for 6 minutes until the scampi are sizzling and cooked through.
  • 4.
    Meanwhile, remove the black-pepper butter from the fridge and slice into discs. Top the warm scampi with pieces of the peppered butter. Scatter with parsley and serve with lemon wedges, and shoestring fries if desired.
