Rum and raisin chocolate pudding

This one-bowl batter can be made ahead of time and kept in the fridge, then baked while you’re sitting down to eat dinner.
Ingredients (11)
- 100g chopped unsalted butter, at room temperature
- 1/3 cup (80g) firmly packed brown sugar
- 1/3 cup (80ml) pure maple syrup
- 2 large eggs, at room temperature, whisked
- 1 1/2 cups (225g) self-raising flour
- 1/2 cup (125ml) milk
- 2 tbs dark rum (see note)
- 3/4 cup (120g) raisins
- 80g chopped chocolate (dark or milk)
- Ice cream (we used rum & raisin flavour)
- Chocolate sauce, to serve

1.Preheat oven to 180°C/160°C fan-forced. Grease a 6-cup (1.5L) capacity ovenproof dish with 2 tsp butter.

2.Place remaining butter and sugar in a large bowl. Use a wooden spoon to mix until well combined. Add syrup and eggs, stir to combine, then add flour, milk, rum, raisins and chocolate. Stir to combine.

3.Spoon into prepared dish and level top. Bake for 45 minutes or until cooked when a skewer inserted in the centre comes out clean and top is golden.

4.Top with scoops of ice cream and a drizzle of chocolate sauce to serve.
Recipe Notes
You can replace the rum with any liquor you have, or for an alcohol-free version, replace it with freshly squeezed orange or lemon juice.
