Speck and grilled plum salad
The saltiness of speck and sweetness of plums is the perfect flavour duo.
Ingredients (8)
- 400g penne pasta
- 200g piece speck, thinly sliced
- 3 plums, stones removed, cut into wedges
- 1 red onion, cut into wedges
- 1/3 cup (80ml) extra virgin olive oil
- 1/4 cup (60ml) raspberry vinegar (substitute red wine vinegar)
- 1/3 cup (55g) roasted chopped almonds
- Basil leaves, to serve

1.Cook the pasta according to packet instructions. Drain and rinse under cold running water.

2.Meanwhile, heat a chargrill pan or barbecue to high heat. Toss speck, plum and onion in a bowl with 1 tbs oil. Grill speck, plum and onion for 2 minutes each side or until grill marks appear.

3.Whisk vinegar and remaining 1/4 cup (60ml) oil in a bowl until well combined.

4.Toss dressing, pasta, speck, plum and onion together on a serving platter and scatter with almonds and basil.
