Tuna nicoise pasta salad
A quick and easy meal that's budget friendly to boot.
Ingredients (10)
- 350g curly pasta
- 150g green beans, trimmed
- 4 eggs, at room temperature
- 250g truss cherry tomatoes
- 1/4 cup (60ml) extra virgin olive oil
- 1 1/2 tbs runny honey
- 3 tsp Dijon mustard
- 425g canned tuna, drained
- 1/2 cup (75g) pitted kalamata olives, finely chopped
- Basil leaves, to serve

1.Cook the pasta according to packet instructions. Add beans in last 2 minutes of pasta cooking time. Drain and rinse pasta and beans under cold running water.

2.Meanwhile, bring a saucepan of water to the boil. Add eggs and cook for 8 minutes or until hard-boiled. Drain. When cool enough to handle, peel and finely chop.

3.To cook tomatoes, heat a frypan over high heat. Add tomatoes and cook for 1-2 minutes each side or until blackened.

4.To make the dressing, whisk oil, honey and mustard in a bowl until well combined.

5.Arrange all ingredients on a large serving platter, scatter with basil leaves and drizzle with some dressing. Serve with remaining dressing alongside.
