These easy waffles are the perfect sweet start to any morning or a family-friendly dessert idea.
Ingredients (8)
- 1 2/3 cups (250g) plain flour
- 50g caster sugar
- 50g salted butter, melted, plus extra, softened, for serving
- 2 tsp vanilla extract
- 3 large eggs, at room temperature, separated
- 1 cup (250ml) milk
- 1 cup (250ml) chilled mineral water
- Pure maple syrup, to serve

1.Sift flour into a large bowl, then whisk in sugar. Make a well at centre of the mixture. Add butter, vanilla, egg yolks and milk to the well at centre of the flour mixture. Whisk until starting to combine, then slowly add the mineral water while whisking constantly until mixture is combined and almost smooth (mixture will be thick).

2.Using handheld beaters, whisk egg whites in a separate large bowl until firm peaks form, then fold into batter until combined. Mixture will be mostly smooth with little clumps of egg white still visible. Cover bowl with a tea towel, and set aside at room temperature for 20 minutes to rest.

3.Preheat a waffle maker.

4.Stir batter to combine, then pour approximately 1/2 cup (125ml) measures of mixture into preheated waffle maker. Close lid and cook for 4-5 minutes, until golden, crisp and cooked when a toothpick inserted at centre comes out clean. Repeat with remaining batter.

5.Serve waffles warm with butter and syrup.
