The Nilands are scaling up with their first international venue.

Everyone’s favourite fish savants, Josh and Julie Niland, have set their sights on the foodie wonderland of Singapore. Partnering with Edition Hotels, the acclaimed Australian restaurateur and multi-award-winning chef will helm the hotel’s signature restaurant, with doors slated to open in November.

With nods to stylish old-world elegance, the Singapore Edition restaurant will encompass Niland’s globally recognised passion for seafood and sustainability, while also creating a closed circuit between the restaurant and lobby bar to minimise waste while delivering exceptional dishes that have made the Australians household names.

The Nilands already have a micro-empire of venues including Saint Peter, Fish Butchery Paddington, Fish Butchery Waterloo and Charcoal Fish, Rose Bay and Petermen, St Leonards. Saint Peter, Singapore will be not only their first restaurant outside of Australia, but their first outside of the Emerald City.
