Chef Adam Liaw to man the tongs at the King and Queen's royal barbecue

Onions and sauce, love?

King Charles and Queen Camilla have touched down in Australia and have got the country in a tizzy. The rigid itinerary was revealed months ahead of Charles and Camilla’s Royal Arrival and since landing on October 18, the couple have ticked boxes and made appearances at church services and audiences with governor generals, and a whopping 10 minutes at a lunch held in King Charles’s honour.

The second official day of the Royal tour begins at Parliament House in Canberra, where Charles and Camilla were welcomed by Prime Minister Anthony Albanese and other prominent dignitaries. The King addressed a reception, celebrating notable Australians in fields like health, arts, and sports. The packed itinerary will see Charles visiting the CSIRO to learn about Australian efforts to combat bushfires and explore the National Botanic Gardens, focusing on Indigenous plant use and climate change impacts. The couple will then head to Sydney to conduct a Fleet Review of the Royal Australian Navy on Sydney Harbour.

But undeniably the most Aussie part of the couple’s tour Down Under is the community barbecue lined up in Western Sydney, with none other than chef Adam Liaw on the tools, turning sausages like a pro.

Liaw is very specific about his snag assembly too, telling the Today Show, “I put the onions underneath.” A boss move that even volunteers at Bunnings sausage sizzles have been encouraged to do – to avoid any hazardous slipping on rogue spilled onions.

Liaw then threw the rule book out the window entirely, adding “I actually put the sauce underneath as well, because I have a moustache.” We are clutching our pearls.

The King and Queen will chat with locals and sample produce from across New South Wales. Charles has advocated for local producers for decades and even opened doors for the public to taste the ice cream courtesy of the Royal cows.

On a more serious note, King Charles will meet with leading experts on melanoma, while Queen Camilla will focus on literacy and domestic violence issues. She’ll engage with children in a Queen’s Commonwealth Essay Competition workshop and discuss domestic violence with survivors and experts.
