Finish off your morning swim with breakfast mimosas and crumpets with ocean trout and caviar.
Don’t expect smashed avocado on sourdough at Matt Moran’s Sunday Session: Brunch with North Bondi Fish event. The celebrated chef says the pop-up brunch he has created for American Express delicious. Month Out will be a celebration of seafood that leans into its sun-splashed North Bondi location.
“The seafood brunch is going to reflect the location. It’s not going to be your typical breakfast or lunch menu. It’s premium oysters with a bloody Mary granita, it’s mimosas and crab cakes and cured ocean trout on savoury crumpets. Expect the unexpected,” says Moran, whose focus on local produce underpins the menus at all of his restaurants.
Moran says he has borrowed inspiration for the pop-up brunch at North Bondi Fish from his travels corkscrewing around the Californian coastline.
“The Californians do brunch better than we do, but I’m out to change that. I want to introduce the American concept of brunch to Australians. Select pristine seafood and produce, and let the ingredients shine,” says Moran, speaking to us from his family farm.

Moran has vivid memories of eating lobster rolls and salmon tartare for brunch at Coast Santa Monica at Shutters on the Beach in California, which he rates as one of his most memorable culinary experiences.
“There are a lot of similarities between the Santa Monica Boulevard and Bondi Beach. The food is informed in many ways by the lifestyle and it’s all about the people-watching and the beautiful ocean views,” says Moran.
“North Bondi is a bit of a sun trap. It’s in a little protected pocket of the Eastern Suburbs and it’s where a lot of the long-term locals live. Like the Californian coastline, it’s got such a great vibe,” says Moran.
The celebrated chef and restaurateur says he has curated a brunch that will stand out as a celebration of seafood. The decadent multi-course breakfast will include a cocktail on arrival, bespoke gift, and a shared brunch menu of dishes so incomparably delicious he believes his customers might start demanding them.

“What excites me most about this event is that it gives me the chance to go out and innovate and do something different. The dish I’m most excited about is the crab cakes with dill tartare. It’s going to be the superstar,” says Moran.
The citrus-cured ocean trout draped over a house-made crumpet slathered in hollandaise and Yarra Valley Caviar is also incomparably delicious. “It’s a take on eggs benedict, but there are no eggs,” he says.
Moran says he has loose plans to make the Brunch with North Bondi Fish pop-up permanent if it proves popular. “What’s not to like? Have a sleep in on the weekend, wander down to North Bondi Fish and grab brunch in the sunshine,” he says.
