World's best restaurant Noma to return to Kyoto for a 10 week residency

If you missed out the first time, you now have another chance.

Heralded the world’s best restaurant, Denmark’s Noma is heading back to Kyoto for a 10-week residency this year. The news follows a wildly successful residency at the Ace Hotel in Kyoto in 2023, prompting a return to the same venue in October 2024 for an autumn residency.

Under the guidance of renowned head chef René Redzepi, Noma Kyoto will give avid fine-diners the opportunity to taste the revolutionary food now that Noma Copenhagen has moved away from the traditional restaurant model and into the “pioneering test kitchen” role.

Noma Kyoto Ace Hotel

Redzepi and his crew now focus on the moveable feast, popping up in locations around the world to bring nearly two decades of experience, experimentation and expertise to major cities. To date Noma has held residencies in Tokyo, Sydney, Tulum and Kyoto, challenging the team to be creative with local ingredients and flavours, while utilising groundbreaking techniques honed in the Copenhagen flagship.

As for what diners can expect to eat (and pay), the menu will be a highly collaborative blend of the team’s decade or so studying Japanese cuisine, and the highest quality local producers for everything from wasabi to wagyu. Fermentation is a common thread between Japanese and Danish cuisine, with plenty of pickles, seaweed and miso anticipated.

Noma Kyoto

A seat at the Noma Kyoto table will set you back around $900 per person, with an accompanying beverage pairing of around $500 per person. A 10 percent service charge will be added, too, bringing the whole dining experience to around $1542 per person.

Guests will be seated at a communal table at the Ace Hotel Kyoto’s dining space, with four dinner sittings and three lunch sittings running Monday through Thursday from October 8 until December 18.

Reservations will be available via the Noma newsletter on May 14 at 9pm AEST. Dining and accommodation packages are available to purchase through the Ace Hotel Kyoto website.
